Skinless Zombie-Head in Elbalming Room

There's an old black and white zombie movie I once saw the tail end of and loved, but I don't know the name.
These people are locked in a building at a cemetery where they do the embalming. There's a skinless head that I assume is a zombie that they don't kill because it has no body. In the end, they all run out of the building to the car.
Does anyone know what this is?
